I have made a lot of potato salad over the years and have finally narrowed it down to this one. I have always used Italian dressing, but have added mustard and love it.
SALAD
Potatoes Celery Onion Hard Boiled Eggs
Parsley, chopped
salt and pepper
DRESSING
Mayonnaise
Dijon Mustard
Apple CIder vinegar I don’t really measure anything. Just peel and dice the potatoes in no larger than 3/4 pieces. Bring to boil and cook for 8-10 minutes. Test a piece to be sure it is not too hard inside.. Put them in a bowl. Chop up some celery and onion, enough to add flavor and crunch. (Sometimes I do not add celery. Leftover seems to last longer) Add some chopped parsley and chopped up hard boiled egg. (I use an egg slicer and slice them both ways.) Add some salt and pepper
In a separate bowl, mix together the mayonnaise, mustard and vinegar to taste.
Measurements depend on how much you are making. If I was using a cup of Mayonnaise, I could use about a tablespoon or so of mustard and and a tablespoon or two of vinegar. Make it to your taste. You will learn what you like the more you make it.
Mix it in with the potato mixture. It should be just a tad soupy, as the potatoes will absorb the mayo mixture ENJOY
