Caesar Salad Dressing

Nothing like home made Caesar salad dressing. I don't like to use whole anchovies, I use anchovy paste instead. Much easier, though I do find it hard to get a lot out of the tube.

1T anchovy paste

1T minced garlic

1T Dijon Mustard

1T Worcestershire Sauce

Fresh Squeezed Lemon Juice to taste (at least 1 T)

1.5c mayonnaise (or more - again to taste)

1/4c parmesan cheese

Romaine Lettuce - 2-3 heads

Croutons

Wedge of parmesan


In a medium bowl, squeeze out the anchovy paste. Add the minced garlic, mustard, worcestershire sauce and lemon. Whisk together Add the mayonnaise and mix well. Add the parmesan


When ready to eat, mix into choppped up Romaine and add croutons and shaved parmesan.
